Change of Plans May 26, 2008

Another beautiful sunny day! I have to admit I haven’t been eating healthy meals lately. I have been doing a lot of snacking :( Last night I decided to attempt to prevent that from happening this week, I planned out all my meals for the week, incuding snacks. I hope it helps. It is so warm out today! We took a nice long walk and I was basically sweating. In my meal plan for breakfast today was pumpkin oat bran.. change of plans! There is no way I can eat hot food when I am hot! It would never work. So I opted for FIber 1 Caramel Delight cereal with a pear. The meal had similar calories, fiber, and protein to the oat bran breakfast.

At the end of each day I am going to post my exercise and calories burned for the day, along with calories consumed, fiber, and protein. Every single day I eat a small amount of fat and sat. fat so I decided to stop tracking them. My goal is to have high fiber and high protein. Today I have gardening to do, HW, chores, food shopping, and then relaxing :)

Even though I slept in today, I am getting a lot done so far. I did some school work, took Roxy for a nice long walk, more schoolwork, and I just had lunch. I always get ideas of what to make for meals and it always ends up being too much food. I guess you could say my mind is bigger than my stomach. I make a burrito- Flax Roll Up Wrap with about 1/3 cup of Eden Organic’s Carribean Rice & Beans, and about 2 ounces of Soya Kass Mozzarella Cheese. 

I put it in the oven so the cheese would melt a bit. As it was cooking I cut up some kiwi and strawberries. About halfway through eating the burrito I felt full. But I know how my stomach works and I knew if I only ate half, I would be looking for snacks in an hour. So I finished the burrito and just felt way too stuffed for my fruit. So I put in back in the fridge and now I have a ready-to-eat snack for later.

 

 

 

Beautiful Day May 24, 2008

It looks like another beautiful day out there. And, just like yesterday Roxy is bugging me to go for a walk… so I’ll make this a quick post. I have been waiting all week for my nose to clear up to workout because I need to breathe out my nose when I am exercising. I hope Monday I am good to go because I am starting to feel lazy. I got a new book about free weight exercises and yesterday I just TRIED a couple.. meaning I only did about 5 reps with a low weight just to see if I like the exercises. Well, I woke up sore today! I am not even joking.. how sad is that? For breakfast I had a soy protein shake with a nice plate of fruit.

 

 

 

 

Rainbows! May 23, 2008

Good morning.. Happy Friday. Considering I don’t work and my online classes call for HW submission on Sundays, the weekends have lost their appeal to me. Every day of the week is the same! It looks super sunny outside so Roxy and I are going to take a walk down the beach. For some reason she is really feisty this morning. Usually she sleeps until 11ish but it’s 10 now and she’s tearing her toy bin apart.

Last night for dinner I had Chinese Food with my little brother. I had a big bowl of broccoli with soy sauce, a bowl of white rice with soy sauce, and one sweet and sour shrimp. (No picture). There is an advantage to all this rain we’ve been having… rainbows! You won’t believe the rainbow I saw driving yesterday. I pulled over to take a picutre.

For breakfast I had a bowl of Fiber 1 Caramel Delight with a big bowl of mixed fresh fruit (blueberries, strawberries, blackberries, and pineapple).

Roxy is really starting to annoy me know.. she is barking, running up to me, and every single toy is now out of her toy bin and scattered about the house. I guess it’s time to walk!

 

Caught in the Rain May 22, 2008

Since I ate breakfast so early I was hungry for lunch around 11:30. I had the rest of my Tofutti on 2 slices Arnold’s Flax & Fiber bread. On the side I had about 1.25 cups cherries. It kind of looks like my cherry display is starting to go bad so I put it in the fridge!

After lunch I went back to studying but realized I couldn’t focus. So Roxy and I ventured out to take a walk. About 15 minutes away from home I noticed the sky started to get really dark… so we did a U-turn! All of the sudden it got super windy and started down-pouring! Roxy hates the rain more than I do so she started running. So we both were sprinting home in the downfall.. it was so crazy and kind of fun! There is something exciting about not living so carefully. Anyway, since I ate lunch early (ugh I hate when my meals get off schedule) I was hungry around 2. I was craving popcorn, and since we don’t have a microwave I had to make it stovetop-style… which turned out to be harder than I thought. I was shaking the stupid pot for 20 minutes!! I was sweating! Finally the kernels started to pop and they all turned out burnt :( After all that work I wasn’t about to throw it out so I just ate it burnt!

 

Green Breakfast May 22, 2008

Good morning. To recap on yesterday for lunch I had a vegan BLT wrap from the health food store (whole wheat wrap, BBQ tempeh, lettuce, tomato, soy mayo) and for an afternoon snack I had about 1.5 cups fresh pineapple. I bought it about 5 days ago and set it upside down on the counter. This allows all the juice from the top and stem of the pineapple to drip down and make the pineapple super juicy! It was delicious. (The BLT picture is from another time I had it).

For dinner I had a smorgusboard (I don’t know how to spell that). I had about 1.5 cups manhattan clam chowder, some baby carrots with homemade hummus, about 2 oz. grilled salmon, and a couple french fries (I couldn’t resist). I don’t have a picture, but totals for the day: Calories- 1160, Fiber- 34, Protein- 43

I woke up at 6:00 today to get started on my Biology reading. Around 7:30 I was starving and craving bagels! I opted for something with more nutritents. I make a weird egg-imitating creation. I cooked about 1/4 sweet onion, 1/2 cup basil polenta, a chopped up tofu steak, and about 1 cup of fresh spinach. I ended up adding more spinach to the pan once it started cooking.

I cut up two kiwis to have on the side. The plate looked very green… I guess you could say I got in all my greens at breakfast! I only ate about 3/4 of the spinach mixture and I am still stuffed. Totals for this meal: Calories- 292, Fiber-11 Protein- 12

 

 

I am a College Graduate! May 21, 2008

Yay… I am finally done with college.. well just this one at least. If being sick wasn’t enough for graduation yesterday, Mother Nature decided to make it pour!! When we got to the ceremony in our gowns we had to stand outside, in the pouring freezing rain, for two hours!! I don’t know what the delay was, but we couldn’t go inside until all the guests were seated. Once we got in, everyone was soaked and freezing. I ended up leaving the ceremony (shortly after my name was called and I received my “fake” diploma). What a terrible day :( So the stupid ceremony took up my entire day and then my family went out to eat afterwards. Dinner was delicious- I had a couple pieces of veggie sushi (pumpkin, mushrooms, sweet potato) and Thai Curry Noodles (noodles, peppers, mushrooms, shrimp, scallops in sauce made with coconut milk and curry). It was scrumptious. Oh, and I cannot forget the dirty martini!

I forgot to post my dinner two nights ago.. which ended up being Rising Moon Organic’s Butternut Squash Ravioli with some Hunt’s tomato sauce.

Today for breakfast I had a cup of coffee with soy creamer, FIber 1 Caramel Delight cereal (1 cup), 1/4 cup vanilla soy milk, and about 15 cherries. I put all my cherries into a square glass dish and it makes a lovely kitchen centerpiece! It looks so cute.

 Breakfast was 298 calories, 11 fiber, 6 protein. I am still trying to figure out my online classes. I think I have some stuff due tonight so I better get to it!

 

Sicky and Icky May 19, 2008

I feel like I am getting sicker by the minute. My entire coffee table is covered in used tissues.. I don’t feel like cleaning them up. I haven’t had an appetite all day. Around 4:30 I realized I better eat something so I had PB&J on a honey wheat english muffin with some strawberries and blueberries.. and some tea on the side. I got a brand new computer this weekend because my online classes don’t support Apples. Isn’t that bogus? Anyway after I ate my late lunch, I looked at my computer and there was tiny blue dots on the keys. Blueberry juice! I guess it shot out of mouth as I chewed them? Very weird…

I don’t know what’s on the menu for dinner yet but it probably being something light since I don’t feel like eating much. However there might be some ice pops on the dessert menu…

 

Classes Begin! May 19, 2008

I started my online classes today. Wow is it overwhelming! There are so many links and information and assignments! It took me an hour just to figure out the website. I have a feeling I am going to be a lot busier this summer than I had planned.

I woke up sick this morning :( Well I knew I was getting sick the last couple days and this morning I could really feel it. I feel achey, my throat is itchy and sore, and I my nose is stuffed and runny at the very same time. I can’t even breathe out of my nose. So much for my gym plans today.. hopefully it is just a small bug and will go away soon.

For breakfast (even though I could hardly taste it) I had pumpkin rolled oats. It wasn’t as good as I’d imagined it would be, or maybe it’s just because I can’t really taste it. About halfway through I was sick of it but I forced myself to eat it all or else I would be wondering around the kitchen in an hour looking for a snack. I cooked 1/2 cup rolled oats, then added 1/2 cup pumpkin, about 2 tbsp. soy creamer, cinnamon, nutmeg, and about 1 tbsp. walnuts on top.

I have a lot of small errands I need to get done today. I have to go pick up my cap and gown for graduation tomorrow. I am not even excited, I don’t know why. People keep saying to me “excited for Tuesday?” and my first reaction is “What’s going on Tuesday?” I also need to get some new workout clothes. I have the same 2 capri pants and about 3 tanktops that I alternate. I am pretty sure all of them are at least 4 years old. Most people would think buying workout clothes is like buying toilet paper, but I am excited. Since I don’t have any classes to actually go to, nor do I work, I don’t need to necessarily get dressed nice all day. So I will most likely be in workout clothes. I have found that if I stay in workout clothes all I day, I am more likely to be active. I am more willing to take Roxy for nice long walks or jogs if I am already in my workout clothes and didn’t spend an hour getting ready. I also need to stop at Staples to get some folders and things for class. Oh, and I also have a quiz due tonight.. yikes!

 

New semester, new goal May 17, 2008

I  haven’t been photographing many of my meals or exercising as much as I should.. and I think I know the reason! School ended Monday night and my next semester starts this Monday. So basically this week (last Tues through tomorrow) are my only days of freedom! So my schedule this past week has consisted of nothing but going out to lunch, going out to dinner, etc. I have had nothing in my schedule and no where to be so I have slept in every single day. There was a list of things I had wanted to get done during my “free week” and of course when my schedule was hectic during finals, I thought “I will have 6 empty days to get everything I need done.” It is so ironic that I get the least amount done when I have the most free time! It is kind of like in business- they tell you if you want something done, give it to the worker who is busy, not the one standing around.. because the busy one is in work mode and will get it done faster. So I am hoping to get back on track Monday with everything. I am not too sure how my online classes work but I hope it is a light load… I hate getting stressed.

I also have a new goal! I want to start working toward it Monday. I want to…. run a marathon! Now if you knew me you would know that I am probably the person least capable of doing this. I think I have a touch of asthma and get short of breath very quickly. I also have never been athletic and never done anything involving running.. including sports involving running. So I see this goal as being very hard for me to reach.. which is why I want to get there. Since I know it will take me a long time to get into running shape I am aiming to do the annual 5-mile race in my town next year. The one this year is actually May 24.. I might stop by to watch this year. I think giving myself a year to accomplish this goal is what I need. 

I actually decided I wanted to reach this goal as I was driving home from my last exam. I realized that I have never done anything like this before- I have never set a goal and worked hard to reach it. Maybe with school I have kind of done something like it- where I set a goal of a grade I want to get and then study to reach it. But I never set any physical goals for myself. I am really excited. I can’t imagine how great it must feel when you reach a goal that you once thought impossible!

So to wrap it up, I may not post on here the rest of the weekend, but you can bet your bottom dollar I will be back to posting regularly Monday morning :) I will be posting my practice jogs and their times for each mile. This way I can see my improvement. See you Monday!
